Alex Guarnaschelli’s favorite chicken dish is a ‘sleeper who snuck up on me’

It’s always fascinating to learn more about the dishes that accomplished chefs consider their favorites. Their palates seem to discriminate between ingredients and seasonings so much more than the average eater.

And for Food Network personality Alex Guarnaschelli, his favorite chicken dish, ultimately, is by no means a gourmet meal or out of the reach of an everyday kitchen.

Guarnaschelli says this chicken dish is his “favorite”

In his food-focused blog for People, the chef opened up about the chicken dish that won his heart. It all started with chicken thighs.

“Apart from a straight roast breast with fresh thyme and salt, I will admit that I gravitate towards chicken thighs,” said the Chopped judge wrote. “They have this bit of fat and a thick layer of skin that adds great flavor and insulation for searing and braising.”

And, she added, the chicken meal she loves so much has become a favorite without her even realizing it. In fact, it became her go-to more times, apparently, than she could remember.

“The following recipe is just plain tasty, and it’s been a sleeper I’ve come across in a few years. I kept coming back to it as a “rainy day” dish or something I make and let sit overnight to warm up for my daughter and I on a night when I have less time to cook.

And as an accompaniment with this sumptuous chicken? “I put it on a bed of Basmati rice or simple roast potatoes. I also like it with braised savoy cabbage or roasted whole carrots.

Alex Guarnaschelli’s Braised Chicken Thighs Recipe is a Tasty Weeknight Dinner

Almost every meat eater has their favorite chicken dish, whether it’s a bucket of fried chicken, grilled chicken breast, or kid-friendly chicken tenderloins.

Chef’s easy dish and the ultimate one skillet meal includes chicken thighs and thighs, whole cumin seeds, chili flakes, minced onion, grated ginger, garlic cloves, tomatoes canned, coconut milk, cinnamon sticks, dried or fresh bay leaves and, if needed, water.

How to make Guarnaschelli’s Braised Chicken Dish

To assemble this best-to-go recipe, the chicken pieces are browned in a large skillet.

Guarnaschelli gives two important tips here: “Don’t overcrowd the pan” and once the chicken is placed in the hot oil, “Resist the temptation to move or turn the pieces.” To achieve a beautiful golden color, the chicken will need to brown for about five to eight minutes on this first side.

After that, they can brown for about five minutes on the other side, then rest on a plate or tray. They will return to the pan once the sauce has been assembled.

The rest of the ingredients are added to create a full-bodied sauce in which the chicken pieces are slipped and then braised for about half an hour, “until the pieces are cooked through”.
