Loaded with grape tomatoes, red onions and fresh herbs, all in a red wine vinaigrette, this pasta salad is a winner of a warm weather dish.
De Laurentiis orzo salad is packed with fresh herbs
On his cooking and lifestyle blog Giadzy, De Laurentiis said his “chirpy and tangy orzo salad is the perfect addition to any barbecue or beach picnic.”
She explained that orzo is the ideal salad dressing, mainly because “Orzo holds up better to dressings without getting soggy like other shapes can, so be sure to make it ahead of time.” .
With chickpeas, grape tomatoes, chopped red onion, and fresh basil and mint leaves, it’s a light and refreshing meal that can feed any crowd. For example, the culinary personality notes in the Food Network recipe video, link below, that “you can also put in scallions or sweet onions. I like red onion, I like purple color. A little bite, they are soft.
Chef’s dish is more than just a pasta salad
Orzo pasta is cooked in chicken broth in this dish, until the pasta is “tender, but still firm to the bite”. It is drained in a colander (small orzo can slip through the holes in a regular colander) then stirred to cool. De Laurentiis notes that the pasta should be completely cooled before combining with the other ingredients.
Once it is at room temperature or cooler, the beans, halved tomatoes, chopped onion, and torn basil and mint leaves can be tossed with the pasta.
Finally, the salad’s zesty red wine dressing completes this fresh, colorful dish that’s the perfect complement to potlucks and summer get-togethers. Critics called the homemade dressing “amazing”, “perfect”, as well as “compatible, complementary”. [sic]and delicious.”
It is easily prepared in a blender with vinegar, lemon juice, honey, salt and pepper. As the mixture mixes, the oil is slowly poured in. Season to taste.

Another fan of the dish made it his own: “I love this recipe! I’ve been making this salad for several years now, having first seen Giadia make it. I treat the vinaigrette by adding a little mayonnaise, to make it a little creamier. It’s perfect when made the day before and left to sit overnight – and goes so well with grilled chicken, salmon or kebabs! Delicious salad for the summer months and super easy to make!”
