The judges liked the sauce but were surprised that Harry didn’t choose a fish with a stronger flavor.
Parts of the fish were undercooked, which sealed Harry’s fate.
Ingredients for Marco’s pantry favorites included tabasco sauce, red currant jelly, anchovies, chardonnay vinegar, red wine vinegar, brandy, soy sauce, Dijon mustard, pickles, ketchup, honey, Worcestershire sauce and capers.
Harry says his main mistake was choosing plaice as the main course and opting for a classic method of preparation away from his more typically adventurous style.
