If you’re looking for a beloved dish that freezes well and saves the day when dinner is the last thing on your mind, look no further than Food Network star Ree’s freezer meatball recipe. Drummond.
Drummond’s recipe is super easy to make with ingredients you probably already have on hand, so you might want to whip up a batch ASAP.
Drummond keeps its all-purpose meatballs ‘in freezer bags’
The Culinary Personality Meatballs recipe calls for ground beef, plain breadcrumbs, milk, heavy cream, fresh parsley, whole grain mustard, red pepper flakes, eggs and olive oil. That’s it!
She says in the Food Network video, below, for this recipe, “These are all purpose meatballs, my family loves them and I keep them in bags in the freezer and then toss them in whatever sauce I want. .
“I’ll tell you what, frozen food is my life. If we have a really busy day or I’m running late, I just pop it in the oven, and we’re good to go.
Her meatball recipe is so easy to make
Drummond begins by combining in a large bowl five pounds of ground beef with the breadcrumbs (“You can use plain breadcrumbs, seasoned breadcrumbs, panko, whatever you have on hand”) and “a good amount” of salt and pepper.
Crushed red pepper flakes also come in, followed by “a few tablespoons of really gritty mustard,” whole milk, eggs, and “a nice touch of heavy cream.”
Finally, she adds “beautiful color” with chopped fresh parsley incorporated into the meat mixture.
She mixes the ingredients with her hands: “It’s a necessary evil… if you used a spoon to mix everything together, it would take you about four months to mix everything,” she joked.
Using a spoon, she rolls the meatballs into evenly sized orbs. “This mix will actually make 125 meatballs,” adds Drummond. “It’s a lot!”
She freezes them briefly on trays before browning them in oil (“It’s a little easier that way”). Once they’re fully cooked, they can go in the freezer and they’re ready for meatball sandwiches, pasta sauce, or just a quick snack.
“These meatballs couldn’t be more versatile,” says Drummond. “They basically go with everything.”
