What’s for dinner? Deep BBQ chicken, tomato and avocado pizza

For 4 people

You will need: For the dough – 2 cups of flour; 1 packet of dry yeast ; a pinch of salt; 1 cup of warm water; 30ml melted butter

For the chicken – 3 x skinless chicken breasts, sliced; salt and pepper; 30 ml of olive oil; ½ cup barbecue sauce; a handful of fresh basil, chopped (plus extra for serving); 30 ml tomato paste; ½ tray of cocktail tomatoes; 2 cups grated mozzarella or cheddar cheese; 1 avocado, sliced

How:

Dough:

Preheat the oven to 180°C.

Combine flour, baking powder and salt in a large bowl.

Add the melted butter with the water and mix to form a soft dough.

Knead the dough for 5 minutes and place it in an oiled bowl, cover with cling film and let rise for 1 hour.

Chicken:

Generously season the chicken with salt and pepper.

Heat the oil in a large skillet and brown the chicken for about 3 to 5 minutes.

Add the BBQ sauce and basil, then toss to coat the chicken.

Cook another 3 to 5 minutes or until cooked through and sticky. Put aside.

To assemble:

Place the dough on a floured surface.

Using your fingers, press the dough into a greased 25cm cast iron skillet or baking dish.

Cover base with tomato paste and top with chicken mixture.

Bake for 15-20 minutes before removing from the oven.

Sprinkle pizza with tomatoes and cheese and bake for another 10-12 minutes or until cooked through and cheese is melted.

Complete your dish with fresh avocado and basil just before serving this delicious treat!

Cook’s Note: Roll out the pizza dough and bake on a baking sheet if you don’t have a cast iron skillet.
